this is a message from one of my chefs. Touching..:) im gonna miss chef pam pramis.. :(
My dear H31,
This is my little way of saying good luck and goodbye to all those who are off to their practicum. I was not able to say goodbye to you guys properly. So here is my goodbye speech.
Benilde is not the real world. It is a safe haven where people are beautiful, full of abundance, everyone is busog, and your teachers are caring. The real world is a jungle. There is no iced tea while you are working. And yes you have to stand up for 8 hours. You will meet people from all walks of life, it is competitive out there, instead of caring teachers you might have mean bosses who will scream at you, and you can't act like babies, you have to be strong and prove to them that you are a professionals.
Play by the rules even if you come across people who do not. Sometimes you will encounter persecution so always be prayerful. Lift it up to the Lord, just say "Lord kunin mo na siya" (joke). Just like FIlCUI today you are the executive chef, tomorrow you could be steward. Remember there is justice in this world. So just do your job in the best way you can.
Shine like the stars but let other people notice your shiningyou may be a threat to them so be humble most especially because you are from Benildenot everyone is as privileged as you students from others schools will work harder than you because they need to be absorbed, they need the job afterwards.so be compassionate
My last lesson (pahabol), is that if you want to be a great chefyou need to bring home food to the restaurants and not restaurant food to the home. You are just mimicking French and international cuisine until you have gone out, traveled and tried it Filipino cuisine is nostalgic and is close to your heart your home cooking will be your claim to fameso always cook, cook when you are mad, happy, or sadbecause every time you do you get better.
Never be afraid to make mistakes, most of the best dishes are accidents like beef rendang, try something new, be original, the hell with food critics! Dont rely too much on recipes, remember the ratios, and season with your instinct.
I will always remember you as the exceptional and goody-goody class. You never gave me problems so I thank you for having been good and making teaching you easy for meeven if you got tired of my face from Prim, Baki, Gardma, and Filcui.
I know things will not be the same without you guys. You are the first CA batch, the experimental batch that all other batches will benefit from you leave behind a legacy when you come back to visit and walk through those corridorsyou can be proud to say we were the first. Everyone remembers the first man on the moon but they dont remember the second. All batches will be compared to youyou are the bench mark. That is your honor. So behave during your practicum J
I want to thank team Solomon: Razel, Tin, Shiela, Aezel, Cristablle, and Ej. I know you put in a lot of hard work at SGH. Remember the things you learned in Solomon were to prepare you to run your own business. .
Congratulations to the FILCUI ECs and to all of you for a job well done. Of course I will miss you Sab, Jan, Tin, China, and Danteexceptional students who have devoted so much of themselves for your batchSab and Jan what you did for us for teachers day, for CHIP, or all the grand buffets is really amazingwe will miss you bugging us in the faculty room.
Always remember that I love each and every one of you in my own little way. Like a mom sometimes we have favorites, and there are those who need constant attention or reassurance.and there are those who are shy and just work.. for those who think I wasnt paying attention to them I just want you to know I was watching you but I knew you required minimal supervision because you were performing well on your own
People come into your life for a reason, a season, and a life timefor whatever reason our paths have crossed I want to say thank you it has been great knowing all of you.
Guys, youre on your own nowso make us proud!!!
